Liver Friendly Recipe: BBQ Roasted Salmon

BBQ Roasted Salmon

Ingredients

  • 1/4 cup of pineapple juice
  • 2 tablespoons of fresh lemon juice
  • 4 (6 ounces) salmon fillets
  • 2 tablespoons of brown sugar
  • 4 teaspoons of chilli powder
  • 2 teaspoons of grated lemon rind
  • 3/4 teaspoon of ground cumin
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of ground cinnamon
  • Lemon slices (optional)

Instructions

  • Combine pineapple juice, lemon juice and salmon fillets in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally.
  • Preheat BBQ to a high setting (8+)
  • Remove fish from bag; discard marinade. Combine sugar and next five ingredients (sugar through cinnamon) in a bowl. Rub over fish.
  • Place the grill on medium and coat lightly with cooking spray.
  • Grill for 8-10 minutes or until fish flakes easily when tested with a fork.
  • Serve with lemon slices, if desired.
