BBQ Roasted Salmon
Ingredients
1/4 cup of pineapple juice
2 tablespoons of fresh lemon juice
4 (6 ounces) salmon fillets
2 tablespoons of brown sugar
4 teaspoons of chilli powder
2 teaspoons of grated lemon rind
3/4 teaspoon of ground cumin
1/2 teaspoon of salt
1/4 teaspoon of ground cinnamon
Lemon slices (optional)
Instructions
Combine pineapple juice, lemon juice and salmon fillets in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat BBQ to a high setting (8+)
Remove fish from bag; discard marinade. Combine sugar and next five ingredients (sugar through cinnamon) in a bowl. Rub over fish.
Place the grill on medium and coat lightly with cooking spray.
Grill for 8-10 minutes or until fish flakes easily when tested with a fork.
Serve with lemon slices, if desired.
